ON YOUR TABLE The lemony, slightly tangy flavor of our fresh
goat cheese is extremely versatile. The simplest path to enjoyment is room temperature cheese, with crackers,
fruit and wine or sparkling something. Our fresh goat cheese is excellent on salads, paired with pasta, even in
desserts such as cheesecake. KEEP IT FRESH How long will your fresh goat cheese keep? It is good for several weeks if wrapped properly
in waxed paper, foil or in a loosely covered dish and placed in the coldest part of your refrigerator. Plastic
cling-wraps tend to suffocate cheese and should be avoided.
Goat cheese is a healthful alternative to cow's milk for many people. The fat molecules in goats' milk are smaller and easier to digest. Milk from all animals grazing fresh forage is high in CLA (cis-linoleic acid) which has many beneficial properties including anti-cancer. Fresh goat cheese is lower in fat than cream cheese and aged cheeses, such as cheddar.
WHY GOATS? Goats are lovely, intelligent and clean animals. Capricious is the perfect descriptive for them. The does usually have between one and four kids every spring and produce milk, on average, ten months out of the year. A goat will produce anywhere from one-half to two gallons of milk per day. |
